Galettes de Courgettes au Fromage Blanc are crispy zucchini fritters paired with creamy fromage blanc. Light, flavorful, and easy to prepare, they make a perfect appetizer, side dish, or light vegetarian meal.

For the Zucchini Fritters:

  • 2 medium zucchinis (about 400g), grated
  • 1 tsp salt (for draining zucchini)
  • 1 egg, beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (or dill)
  • 1 clove garlic, minced
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for frying)

For the Fromage Blanc Sauce:

  • 1 cup fromage blanc (or Greek yogurt as a substitute)
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh herbs (parsley, chives, or mint)
  • Salt and black pepper, to taste

Instructions

  • Prepare the Zucchini:
    • Grate the zucchinis and place them in a colander. Sprinkle with 1 tsp salt and toss. Let them sit for 10 minutes to draw out moisture.
    • After 10 minutes, squeeze the grated zucchini with your hands or a clean kitchen towel to remove as much liquid as possible.
  • Make the Fritter Mixture:
    • In a mixing bowl, combine the drained zucchini, beaten egg, flour, Parmesan, parsley, garlic, black pepper, and a pinch of salt. Mix until well combined.
  • Cook the Fritters:
    • Heat olive oil in a large non-stick skillet over medium heat.
    • Scoop about 2 tablespoons of the zucchini mixture and drop it into the skillet, flattening it gently into a patty.
    • Cook for 2–3 minutes on each side, or until golden brown and crispy.
    • Repeat with the remaining mixture, adding more oil to the skillet as needed.
  • Prepare the Fromage Blanc Sauce:
    • In a small bowl, mix the fromage blanc with lemon juice, fresh herbs, salt, and pepper. Stir until smooth.
  • Serve:
    • Serve the zucchini fritters warm with a dollop of the fromage blanc sauce on top or on the side for dipping.

Notes

  • For a gluten-free version, substitute the flour with almond flour or gluten-free flour.
  • Add grated carrots or sweet potatoes to the zucchini mixture for extra flavor and color.
  • These fritters can be made ahead and reheated in the oven for serving.
